1/2 c. Butter, Crisco or Nucoa
1 c. White Sugar
2 Eggs
1 c. well drained crushed Pineapple
1 tsp. Lemon Rind
1/2 c. Raisins
1/2 c. Pecans
2 c. Flour with 1 tsp. Soda, and 1/2 tsp. Salt
1/2 tsp. each Ginger, Nutmeg, and Cinnamon
1/2 c. Pineapple Juice
Mix in order given. Bake in paper cups 20 minutes in moderate 350 degree oven. Makes 26 cupcakes.
