20 Ritz crackers
1 c. sugar (less 3 tsp.)
1 tsp. vanilla
1 c. chopped pecans
3 eggs (whites only)
Roll crackers fine. Add 1/2 cup sugar, pecans, and vanilla. Beat egg whites and add rest of sugar. Fold into rest of mixture. Pour in buttered pie pan. Bake 30 minutes at 350 degrees. Chill 3 hours before serving.
