6 3/4" thick pork chops
2 Tbs. melted shortening
1/2 tsp. salt
1/4 c. chopped onion
1/4 c. chopped green pepper
1 clove garlic, crushed
1-1/2 Tbs. cornstarch
1 Tbs. brown sugar
1/2 tsp. pepper
1/3 c. water
2 Tbs. vinegar
2 tsp. soy sauce
1 20oz. can pineapple chunks (undrained)
3 Tbs. tomato sauce
1 tsp. grated lemon rind
1/2 tsp salt
1/2 c. Schermer Mammonth Pecan Halves
Brown chops in shortening. Remove chops and place in a lightly greased 13 x 9 x 2" baking dish. Sprinkle chops with 1/2 tsp. salt. Saute onion, green pepper and garlic in pan drippings. Remove from heat and stir in cornstarch and brown sugar. Gradually add water, vinegar and soy sauce, stirring well. Add remaining ingredients, except pecans. Cook over low heat for 10 minutes, stirring constantly.
Pour sauce over pork chops. Cover and bake at 350 for 45 minutes. Uncover and bake an additional 15 minutes or until done. Sprinkle with pecan halves. Yields 6 servings.
