1 c. all-purpose flour
1/2 c. butter, softened
1/2 c. chopped pecans
1/4 c. sugar
2 eggs
2 tbsp. lime juice
1/2 to 1 tbsp grated lime rind
1 c. sugar
2 tbsp all-purpose flour
1/2 tsp baking powder
powdered sugar (optional)
Combine 1 cup flour, butter, pecans and 1/4 cup sugar. Mix until crumbly, using a pastry blender. Press into a greased and floured 12 x8-inch baking pan. Bake at 350 degree for 15 minutes.
Beat eggs with a fork, adding lime juice, rind, 1 cup sugar, 2 tablespoons flour and baking powder. Pour mixture over crust. Bake an additional 25 minutes. Cool. Sprinkle with powdered sugar if desired. Yields about 3 1/2 dozen.
