2 c. all-purpose flour
2 c. sugar
2 tsp. cinnamon
1 tsp. salt
1 c. finely chopped pecans
1 tsp. baking powder
1 1/4 c. cooking oil
4 eggs
3 c. grated carrots
1 tsp. soda
Icing:
1 (8 oz) pkg. cream cheese
1/4 c. margarine
1 box confectioners sugar (4 c.)
2 tsp. vanilla
1 c. chopped pecans
Sift together flour, sugar, cinnamon, salt, soda and baking powder. Add oil and eggs, one at a time, to flour mixture. Add carrots and pecans. Bake in 2 or 4 well-greased and floured layer cake pans at 350 degrees for 35 minutes.
