Carolina Yam Spice Cake

1 c. mashed cold cooked yams

3/4 c. butter or margarine

2 c. brown sugar, packed

4 eggs

1 tbsp. grated fresh lime rind or lemon

1 tbsp. fresh lime juice

1/2 tsp. vanilla

2 1/2 c. sifted all-purpose flour

1 tsp. each baking soda and baking powder

1 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

1 c. chopped pecans

In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in lime rind, lime juice and vanilla. Sift together flour, baking soda, baking powder, salt, cinnamon and nutmeg.

Combine butter and sugar mixture and flour mixture. Then blend in cold mashed yams and flour mixture. Stir in pecans. Turn into greased and floured 10-inch tube pan and bake in a 300 degree oven for 1 hour and 20 minutes. Remove from pan. Serve warm or cooled, with whipped cream or ice cream. Makes 16 servings.
